Since it’s a lazy and rainy Friday night, I figured I’d compile some of my favorite things from this crazy and stressful week. Reflecting on the good at the end of a long school week is always helpful for me and is a great way to set oneself up for a positive weekend! Happy Friday (almost Saturday) everyone!
Since it’s “officially” springtime (even though it may not feel like it), I gathered together some outfit ideas featuring a few of my favorite spring trends! 1. Crop tops..yep they aren’t going anywhere, anytime soon!
In honor of the many Sunday brunches probably happening around the world today, I wanted to share with you one of my new food crushes and a classic staple to the fancy brunch meal…smoked salmon. I initially got excited about this somewhat random ingredient during the last dinner on my spring break Carnival cruise last week. I ordered the sushi appetizer because I was craving it all week and finally able to fill the growing void in my stomach for some yummy raw fish and wasabi. When the appetizer came out, I was initially disappointed with the minuscule portion size, as there were only three little rice balls with pieces of smoked salmon and various garnishes on the plate. However, my disappointment quickly turned around and I was already asking for another round of sushi after cleaning my plate in about 30 seconds. When the trip was over, all I could think about was how to get my hands on some good smoked salmon so that I could relive the few moments in heaven that I experienced during that last dinner. Luckily for me, The Fresh Market here in Athens knows me well and the employees were able to point me in the right direction to their smoked salmon selection quicker than you can say sashimi.
I thoroughly enjoyed my salmon all week, but I was quite disappointed this morning when I realized that I polished off the last slice of it yesterday and wasn’t able to make an impressive brunch with it. However, all is well because I’m sure that I’ll be back to The Fresh Market in no time with another package of salmon in my hands when I leave. I’m only hoping that this food crush of mine turns out to be short-term because my wallet may end up running dry before my mouth does…

This morning, I woke up very early to get some last minute studying in for a big test I had today. Every morning, no matter what, I give myself about 30 minutes of extra time so that I can make and actually sit down to enjoy my coffee and breakfast without feeling rushed and anxious. This time I have to myself every morning really wakes me up and starts the day on a relaxed and positive note (in my opinion). However, I do treat test days a bit more special when deciding what to make myself for breakfast. Instead of the usual Greek yogurt or oatmeal mixed with various fruits, I always make some kind of egg-based dish since I’ve always believed that they give my brain a little boost. This morning, I was exceptionally lucky because I not only had eggs, but also some fresh smoked salmon, avocado, and whole grains, which are all listed as brain-boosting “superfoods” by WebMD! I promise they are…check out the WebMD full list if you don’t believe me! Anyway, my breakfast was so satisfying and combined with some berries and the usual coffee on the side, I felt confident and ready to kick ass on my test. Check out a few snapshots I took this morning and an easy recipe for the delectable and “smart” breakfast I made right below!
½ whole wheat English muffin or whole grain + flax sandwich thin
¼ fresh avocado (mashed)
~ 1 slice of smoked salmon (shred it up with your fingers)
Handful of feta cheese
1 whole egg + 1 egg white
ground pepper and hot sauce for garnish
Scramble your eggs into a bowl and combine them with the shredded smoked salmon and feta cheese
Add ground pepper into the mixture and pour it onto a hot skillet to cook until desired level
While eggs are cooking, toast your bread and spread the avocado on bread while warm
Top the cooked egg mixture on the avocado-spread bread and garnish the mountain of deliciousness with ground pepper and hot sauce
Enjoy while it’s hot! SO YUMMY!

Admit it, about a year ago, 99% of us hadn’t even heard of coconut oil. Upon hearing the word coconut, we usually just experienced flashbacks about the coconut rum-filled regrets from high school or the makeshift Hawaiian bras that all of us ladies have secretly (or not so secretly) tried on before. However, nowadays we can barely go a week without hearing the word coconut oil being name-dropped by celebrities and the media as the new “miracle food.” I’m not ashamed to confess that I am among those gals who have jumped on the coconut oil bandwagon over the past year, and I have happily used the product for many different purposes. Unfortunately, over this past week on my last spring break, I wasn’t reminded of the numerous benefits of coconut oil, but instead of a downside to using it incorrectly. Check out the list below, where I’ve rounded up my favorite uses of the tropical oil as well as a few pointers to make sure you’re getting the best out of your purchase and don’t make the same mistake I did!
It’s great for baking yummy (and healthy) treats- it’s a great replacement for vegetable oil
Put a little into your morning coffee or tea instead of creamer… it may seem scary but actually tastes GOOD
Use it as a delicious-smelling body and face moisturizer- it won’t dry out your skin later since it isn’t made with water
It will give your hair the tropical vacation it deserves- it’s a great conditioner for the dry ends and adds shine
Use it to remove your eye makeup- super moisturizing and gentle on that delicate skin
It’s a fantastic lip balm- it tastes yummy too
Yes, it does serve as a great tanning oil but it only has SPF 4 and won’t protect your skin from high-intensity sun without any other sunscreen— this is where I made my mistake on my spring break cruise, as I relied only on the oil to protect my fair skin on the first day
Make sure the type you get is extra virgin, non-hydrogenated, non-bleached, unrefined, and non-deodorized (you also might as well get organic to ensure perfection)
Eat it in moderation- since it IS still an oil and high in saturated fat
Be aware that it liquefies when the temperature is above 76 degrees Fahrenheit, so store it depending on how you want to use it
Instead of a stage or runway, Karl Lagerfeld built a Chanel Grocery Shopping Center (complete with fresh produce, Chanel shopping carts and baskets, and lots of Chanel branded household items and food). This is SO COOL, and early show arrivers were even able to take a walk through the isles before it started.
2. There were a lot of sporty looks- a.k.a. more sneakers with added sweatsuits and leggings that actually looked comfy and awesome.
3. Even the dressier and more “Chanel-esque” tweed looks seemed more casual and wearable than ever.
4. The hints of Andy Warhol and pop art themes were so fun and exciting when added into the supermarket setting.

I really don’t want to bring down anyone’s Tuesday but there is a good chance it’s already kind of dreary considering the widespread freezing weather and the fact that it’s ONLY Tuesday. Therefore, I figured that I might as well take the time to spread the word about an important story I read yesterday. It’s a story about the horrible prevalence of human trafficking and sex slavery, which is still unfortunately occurring all over the world. The blog post shares a brief account by sex slavery victim, Eden, about her horrifying experiences as a slave and how she was able to escape from it three years after her initial capture. Even though the narrative was written a few years ago, it is still just as important today as it was then and I highly recommend that you search for and watch the movie (Eden), which debuted in 2012 to depict Eden’s story. Last night at the Oscars, there were a lot of blacks, whites, and pastels on the red carpet and I luckily didn’t see any terrible fashion faux pas among the stars! Overall, it was a great night for fashion and beauty and it couldn’t have been more difficult to pick my favorites. Check out my top 10 looks below to see what you think and if you agree with me!
